5 Ingredient Plant-Based Energy Balls Recipe
When the 3pm hunger pangs kick in, these are the little bites you’ll be grateful to have on hand! Made with ingredients you probably already have in your pantry, they’re quick to prep, easily adaptable, and packed with plenty of plant-based protein and fibre to keep you going for the rest of the day.
Ingredients:
1 1/4 cups rolled oats
2 tablespoons “power mix-ins” chia seeds, flaxseeds, hemp seeds
1/2 cup nut butter of choice
1/3 cup honey or maple syrup
1/2 cup mix-ins, such as chopped nuts, cacao nibs, dried fruit, coconut flakes
Instructions
Place all of the ingredients in a large mixing bowl and any other spices like cinnamon or nutmeg you’d like to add.
Stir to combine (we recommend getting your hands in there!). If the mixture feels too wet, add more oats. If it’s too dry, add a bit more nut butter.
Pop the bowl in your fridge for 30 minutes to set slightly for easier rolling.
Take out your bowl and portion the dough into balls of desired size. Roll in extra seeds, or dip in nut butter or melted chocolate for an extra special finish. Enjoy!
Store leftover energy balls in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
