Plant-Based Peanut Butter Overnight Oats Recipe

Looking for a simple, speedy and oh-so delicious breakfast you can grab and go for work? Then these overnight oats are guaranteed to be your new go-to!

Packed with plant-based fibre and protein, they’re the perfect fuel for busy mornings, that’ll keep you full until lunchtime. Mix and match toppings and enjoy every day of the week!

Ingredients

OATS

  • 1/2 cup unsweetened plant-based milk

  • 1 tbsp chia seeds

  • 2 tbsp peanut butter or another nut or seed butter)

  • 1 tbsp maple syrup

  • 1/2 cup gluten-free rolled oats

TOPPINGS

  • Sliced banana, strawberries, or raspberries

  • Flaxseed meal or additional chia seeds

  • Granola

  • More peanut butter!

Instructions

To a jar or transportable bowl, add milk, chia seeds, peanut butter, and maple syrup and stir to combine. (Bonus tip - save almost empty nut butter jars and make your oats in these!)

Add oats and stir a few more times, adding more liquid if necessary.

Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to soak.

Give them a stir the next day, adding more liquid if required, add your toppings and enjoy!
