Nourishing Kitchari Recipe

As we settle into autumn and adjust to the cooler temperatures, it's important to keep our bodies nourished with warm and comforting foods. One such meal that's perfect for this time of year is kitchari - a simple and delicious one-pot dish that's made with rice, mung beans, and spices.

Not only is kitchari a nutritious and satisfying meal, but it's also a great option for busy workdays, as it can be made ahead of time and reheated for lunch at work. Plus, it’s high in plant-based protein and fibre, helping to keep you full and fuelled throughout the day.

Ingredients:

  • 1 cup basmati rice

  • 1 cup split mung beans (also called moong dal)

  • 2 tablespoons ghee (clarified butter)

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander seeds

  • 1 teaspoon turmeric powder

  • 1/2 teaspoon cinnamon powder

  • 1/2 teaspoon cardamom powder

  • 1/4 teaspoon black pepper

  • 4 cups water

  • 1 teaspoon salt

  • Optional toppings: chopped fresh cilantro, chopped scallions, toasted coconut flakes

Instructions:

  1. Rinse the rice and mung beans in cold water until the water runs clear.

  2. In a large pot, heat the ghee over medium heat. Add the cumin and coriander seeds and stir for a minute until fragrant.

  3. Add the turmeric, cinnamon, cardamom, and black pepper and stir for another minute.

  4. Add the rice and mung beans to the pot and stir to coat them in the spices.

  5. Add the water and salt to the pot and stir well.

  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

  7. Simmer for 25-30 minutes, stirring occasionally, until the rice and mung beans are cooked and the mixture is creamy.

  8. If the mixture is too thick, add more water to achieve the desired consistency.

  9. Serve hot with optional toppings like fresh cilantro, scallions, and toasted coconut flakes.
